  • BARBECUE TILAPIABARBECUE

    Ingredients

    1. Scotch bonnet
    2. Fresh tomatoes
    3. Onion
    4. Fresh Ginger & garlic
    5. Maggi&Salt
    6. Curry&Thyme
    7. Veg oil

    Steps

    1. Blend the 1st four list of ingredients together and set aside.

    2. Rinse the fish & using a spoon, scrape the scales off the body.

    3. Make 3-4 slashes on each sides of the fish.

    4. Make a slit along the belly of the fish stopping at the gills.

    5. Scoop out the innards of the fish and rinse properly then set aside.

    6. Heat up a minimum quantity of veg.oil then pour in the blended ingredients.

    7. Add in your seasoning and saute on medium heat for some minutes, your marinade is ready!

    8. Preheat the oven.
      *Wear a plastic glove(preferably) and gently rub the marine all over the fish, ensure to also get it into the fish and on the slashes.

    9. Place in the oven and allow to grill on the first side and then turn over to the second.

    10. Baste/brush with marinade in between the grilling process.

    11. Serve with coleslaw and leftover marinade sauce.

  • BEEF SKEWERS

    Ingredients:

    • 1 pinch Black Pepper
    • 1  Green Pepper
      deseeded and cut into chunks
    • 2 tbsp Olive Oil
    • 1  Red Pepper
      deseeded and cut into chunks
    • 1 pinch Salt
    • 1 tsp Sesame Seeds
    • 0.5 pack SuperValu Fresh Coriander
      (approx 8g) chopped
    • 400 g SuperValu Signature Tastes Topside Steak
      or rump steak, cut into 2.5cm cubes
    For the Dressing
    • 1 clove Garlic
      crushed
    • 2 tbsp Lime
      juice only
    • 1 tbsp Olive Oil
    • 1  Red Chilli
      deseeded and chopped
    • 0.5 pack SuperValu Fresh Coriander
      (approx 8g) chopped

    Method

    This recipe makes 8 skewers

    1. Soak 8 wooden skewers in warm water.
    2. Mix the chopped fresh coriander, olive oil and sesame seeds in a large bowl and season to taste. Add the beef and peppers and toss to coat. Cover and refrigerate for up to 1 hour.
    3. To make the dressing, mix all the ingredients together and season to taste. Set aside.
    4. Preheat the grill or BBQ to a hot setting. If using the grill, line a baking tray with tin foil.
    5. Thread a piece of beef onto a skewer followed by a piece of pepper and so on until the skewer is full.
    6. Place the beef skewers on the lined tray and grill for 15 minutes, or place them straight on the BBQ and cook for the same amount of time, turning often. Drizzle with the dressing and serve.

    2. Ginger and garlic
    3. Tomatoes
    4. Lots of onions
    5. 1 royco cube
    6. Very little oil for frying

    Steps

    1. Put your kuku in a sufuria. Add the garlic and ginger. And a pinch of salt.

    2. Boil your kuku in low for about 1hr or until tender.

    3. After the kuku Is tender. On high heat, let all the water dry.

    4. In the same sufuria add lots of onions and very kidogo oil. Or if the kuku is a bit fatty don’t add any oil

    5. Keep stirring the kuku till the onions are almost brown. And the kuku is browning as well.

    6. Add tomatoes and cover to cook. Add the royco cube and keep cooking for another 5 minutes

    7. Serve with ugali and enjoy
