    1. Bread(2 slices)
    2. Sausage(1)
    3. Eggs (2)
    4. Butter
    5. Baked beans
    6. Vegetable oil, salt

    Steps

    1. In a clean frying pan add a little quantity of Vegetable oil

    2. Break and beat eggs and fry

    3. Fry sausage

    4. Serve with a cup of coffee or juice

    Quite simply one of the most popular food pairing/combo in the entire Nigerian cuisine pantry. Beans and plantain offer a really nutritionally balanced and great tasting dish.

    I love the simplicity and frugality of this combo and whether you like your beans all well mashed up, cooked plain with added pepper sauce or stewed in a thin sauce, it always catches my attention.

    1 derica of beans
    Grated pepper (#50)
    Salt
    Onion(as much as possible)
    Palm oil
    1 tsp sugar(optional)
    Peeled ripe plantain

  • BEANS AND PLANTAIN PORRIDGE

    Ingredients

    1. Beans
    2. Pepper, onions
    3. Seasoning
    4. Ripe plantain
    5. Palm oil
    6. Crayfish

    Steps

    1. Select dirts off beans, wash and boil in pressure pot for about 15mins

    2. Blend pepper and crayfish, slice onions, wash, peel and cut plantain into desired size.

    3. After 15 mins add all other condiments into the pot, stir and confirm taste, cover again and allow to cook for another 5mins, stir at few mins intervals till texture is as desired and then serve and enjoy meal.

    This Rice and Beans recipe is probably going to be easier than most other recipes you find online. When rice is paired with beans and made into Jollof, that’s food to millions of Nigerians.

    • 1-1/4 Cup Black eyed peas or honey beans ( dirt removed, washed and drained)
    • 1 Cup parboiled long grain rice (washed and drained)
    • 1 large red bell pepper
    • 2 small tomatoes
    • 2 medium onions ( red one recommended)
    • 8 cups water
    • 1/2 cup cooking oil (not palm oil)
    • salt or bouillon to taste
