  • CHEESE BURGER

    Without referencing any grievances about the state of ground beef, the key to a perfect cheeseburger comes straight from the butcher. Serve with homemade buns for the love of all things sacred. It would be a shame to serve something this beautiful on anything less.

    Ingredients

    • pounds freshly ground chuck, (at least 80% lean, a.k.a. 80/20)
    • tablespoon onion powder
    • teaspoon salt
    • teaspoon freshly ground black pepper
    • 12 slices deli-counter American cheese
    • large burger buns, preferably homemade, toasted if desired

    Directions

      1. In a large bowl, mix ground beef, onion powder, salt, and pepper until just combined. Do not overmix, or your patties will be tough.
      2. Divide into six portions and form patties, without pressing too hard. They should be uniform in thickness. Smooth out any cracks using your fingers. Make these right before you grill them, so they stay at room temperature.
      3. Preheat your grill, grill pan or cast-iron skillet to high heat and add burger patties. If using a grill, cover with the lid.
      4. Cook until the crust that forms on the bottom of the burger releases it from the pan or grate — about 2 minutes. Gently test, but don’t flip it until it gets to this point. When burgers lift up easily, flip, add two slices of cheese to each, close the lid if using a grill, and cook on the other side for another 2-3 minutes for medium to medium-rare.
      5. Remove burgers with a sturdy metal spatula and transfer them to a plate. Allow to rest for several minutes, then transfer to buns.
      6. Garnish as desired and serve immediately

  • CHEESE BURGER WITH FRIED MUSHROOMS

    The CHEESEBURGER WITH FRIED MUSHROOMS Burger forgoes the constraints of the patty form to present a mushroom in its most dignified state—breaded, fried, full of cheese. It’s insanity!

    Ingredients

    •  pound ground beef 80/20 or 90/10 mix
    • 2 Tbsp. steak seasoning
    • 4 slices Swiss cheese
    • 2 cups sautéed mushrooms and onions
    • 4 brioche buns

    Instructions

    • Heat grill or a pan on the stove over medium heat. Form 1½ pound lean ground beef into 4 even patties. Season each patty with 2 Tbsp. steak seasoning.
    • Cook a batch of sauteed mushrooms and onions and set aside. This will take 10 minutes using the recipe linked in the ingredients. Keep warm by adding to a plate under foil. Then, add patties to the grill or pan. Cook for 8 minutes on one side, then flip and grill for about 6-8 minutes on the other side, or until cooked through. Top with a slice of Swiss cheese and allow it to melt while cooking.
    • Remove burgers from the grill or pan and place each patty on a brioche bun. Top with sauteed mushrooms and onions, then serve.

  • CLASSIC BEEF BURGER

    There’s nothing quite like a good, juicy burger. And, yes, it is possible to eat burgers and lose weight!

    Ingredients

    1 lb extra-lean ground beef (at least 90%)
    3 tbsp Black Pepper Marinade (see recipe below)
    1 tsp kosher salt
    4 gluten-free English muffins or burger buns, toasted
    1 beefsteak tomato, cut into 1⁄2-inch slices
    8 leaves Bibb lettuce
    2 tbsp ketchup
    2 tbsp Dijon mustard

    HOW TO MAKE IT

    1. In a large bowl, mix the ground beef, marinade, and salt and let sit for 10 minutes.
    2. While the beef is marinating, heat an outdoor grill or a grill pan over medium-high heat.
    3. Form the beef mixture into 4 patties and grill for 2 to 3 minutes on each side. The center should be pink and juicy.
    4. Spread each toasted burger bun top with 11⁄2 teaspoons ketchup and 11⁄2 teaspoons mustard. Place a burger on each toasted burger bun bottom and top with slices of red tomato, 2 lettuce leaves, and a burger top.

  • CLASSIC BEEF BURGER IN PEPPER SAUCE

    The Best Classic Burger Recipe – Perfectly seasoned juicy homemade hamburgers.  This easy recipe only needs a few ingredients.

    Ingredients

    • 1 1/2 pounds 80% lean 20% fat ground beef or ground chuck
    • 1 tablespoon Worcestershire sauce
    • 1 1/2 teaspoons seasoning salt
    • 1 teaspoon garlic powder
    • 1/2 teaspoon ground black pepper
    • Optional: 4 slices of cheese
    • 4 hamburger buns
    • Optional: hamburger toppings – lettuce tomato, onion, pickles, ketchup, mustard, mayo, etc.

    Instructions

    • Preheat the grill to 375 degrees F (medium-high).
    • In a large bowl, add the beef. Sprinkle evenly with the Worcestershire sauce, seasoning salt, garlic powder, and pepper. Use your hands to mix the ingredients until they are just combined.
    • Divide the meat mixture into fourths. Take 1/4 of the meat mixture and use your hands to press it into the shape of a hamburger patty that is about 3/4 inches thick. Make an indention in the middle of the patty to prevent bulging in the center of the hamburger as it cooks. Repeat with the remaining meat mixture, making 4 hamburgers.
    • Place the burgers on the grill. Cook 4-5 minutes on the first side. Flip the burgers over and cook an additional 4-5 minutes, until the burgers have reached the desired doneness.*
    • If adding cheese, lay a slice of cheese on each burger patty about 1 minute before taking the burgers off the grill, so the cheese has a chance to melt.
    • Serve the burgers on hamburger buns with optional hamburger toppings.

  • CLUB SANDWICH

    A classic Club Sandwich recipe with turkey, ham and bacon piled high, along with cheddar cheese, lettuce and tomato, in between fresh slices of toasted bread spread with homemade mayo.

    I’m sure we’ve all heard of a Club Sandwich, and if you haven’t – it’s a must try! This double decker sandwich is super easy to make, piled high with fresh ingredients, layered between 3 slices of toasted bread.

    Ingredients

    • Bread – Use your preference of bread! Just make sure it’s toasted.
    • Mayo – You can use my recipe for homemade mayonnaise or use your favourite!
    • Meat – I used cooked bacon, deli turkey and ham slices!
    • Tomato – Fresh tomatoes, sliced.
    • Cheese – I used cheddar cheese, substitute for any cheese of your preference.
    • Lettuce – I like using butter lettuce but iceberg or romaine works great too.

  • THE LOCAL BURGER

    This easy Homemade Beef Burger Recipe will have you skip the drive-through and head home to chow down on these instead! Super easy, only 5 ingredients!

    INGREDIENTS

    • 2 lb ground beef
    • 1 tsp cracked pepper
    • 1 tsp kosher salt
    • 2 Tbs dijon mustard
    • 1.5 Tbs Worcestershire sauce

    Steps

    • Gather all your ingredients.
    • Mix the pepper, salt, dijon, and Worcestershire into the meat, gently.
    • Form 8 patties (I have a shallow prep bowl I use to get them all the same size and use a scale to keep it even!)
    • Heat a grill or a large skillet too high. Cook the patties for a few minutes on each side until done.
    • Remove, and add to a toasted bun with lots of lettuce, tomatoes, cheese, onions, and pickles.
    • Add ketchup, mustard, and mayo as required.
    • Devour.

  • TIJUANA HIT BURGER

    Ingredients

    For the burgers

    • 1 kg beef mince ground beef
    • 3 garlic cloves finely chopped
    • 1/2 cup bread crumbs
    • 1 egg
    • 1/2 tsp ground coriander
    • 1/2 tsp ground cumin
    • 1/2 tsp ground cinnamon
    • 1/2 tsp ground cloves
    • 1 tsp paprika
    • 1-2 tsp salt
    • cracked black pepper
    • 4-6 slices of cheese
    • 4-6 fresh hamburger buns

    Instructions

    For the burgers

    • Combine all the ingredients in a large bowl and mix well. Heat a large frying pan and add some oil.
    • Fry a small amount of the burger mixture to check the seasoning. Adjust if necessary.
    • Form the mince mixture into burgers and fry for +- 4 minutes per side until browned and cooked through. When you’ve flipped the burger the first time, place a slice of cheese on the patty and allow it to melt while the patty is cooking.
    • Serve on a fresh bread roll with homemade salsa and guacamole.
