MARINARA (SEA FOOD) PASTA CHOICES : TAGLIATELE, SPAGHETTI, PENE, MACARONI & FUSILE

Ingredients

4 tbs olive oil

1 brown onion finely chopped

3 garlic clove crushed

250 ml dry white wine
-
3 tbs tomato paste
-
700 g passata
-
2 tbs fresh basil whole
-
1 tbs parsley fresh *to decorate

1/2 tsp Italian mixed herbs

1 kg seafood mix

500 g spaghetti
Method

Heat half the oil in a large saucepan over medium heat, add onion, cook for 3-4 minutes or until softened.

Add garlic and wine, simmer for 2 minutes.

Add paste and passata sauce, simmer for 15 minutes further, stirring occasionally until slightly thickened. Season well.

Cook spaghetti in boiling salted water until al dente. Drain and toss in a little olive oil.

Add marinara mix to the sauce, cook 3-5 minutes over medium heat.

Once cooked toss the sauce through the pasta and serve.

Sprinkle with fresh parsley.
