3 cups all-purpose flour(375 g), plus more for dusting

Preparation
In a large bowl, whisk together the flour, sugar, baking powder, cardamom, and salt. Make a well in the center, then use a rubber spatula to mix in the egg and coconut milk until the dough comes together.
Turn the dough out onto a floured surface and knead until smooth. Dive the dough into 4 portions. Roll out 1 portion of dough into a circle about ¼-inch (6 ml) thick. Cut into 8 triangles. Repeat with the remaining dough portions.
Heat the oil in a large pot until it reaches 350˚F (180˚C).
Working in batches, fry the mandazi for 2-3 minutes per side, until golden brown. Drain on paper towels. Serve as breakfast or a snack with 5. Kenyan coffee or chai.

PREPARATION
Heat the butter and oil in a large frying pan over high heat for 1–2 minutes or until the butter starts to foam. Sprinkle the steak with salt and pepper. For the burgers
Combine all the ingredients in a large bowl and mix well. Heat a large frying pan and add some oil.
Fry a small amount of the burger mixture to check the seasoning. Adjust if necessary.

Instructions
Begin by washing the tomatoes and removing the seeds inside. You only want the exterior flesh.
Slice into strips and then very finely dice the strips.

Instructions
If using basmati or Asian rice it’s best to wash and soak for 30 mins before cooking. Drain and set aside.
In a skillet, saute’ onions, garlic, and ginger in oil for about 2 minutes until translucent.
Add cinnamon, bay leaves, carrots, peas, and green beans – saute a minute more.
Next, add the rice and cook on medium heat for two minutes so the rice is well coated with the oil.
Add stock, fresh herbs – and stir well. Season with salt and pepper.
Let come to a boil – then lower the heat to a minimum low. Cover the pan and let cook on low for 15 minutes undisturbed.
After 15 minutes – switch the heat off and let the rice rest for 10 minutes.
