  • SWEET MANDAZI

    Ingredients

    • 3 cups all-purpose flour(375 g), plus more for dusting
    • ½ cup sugar(100 g)
    • 1 ½ teaspoons baking powder
    • 2 teaspoons ground cardamom
    • ½ teaspoon kosher salt
    • 1 egg, beaten
    • 13 ½ oz coconut milk(400 mL), 1 can
    • oil, for frying

      Preparation

      1. In a large bowl, whisk together the flour, sugar, baking powder, cardamom, and salt. Make a well in the center, then use a rubber spatula to mix in the egg and coconut milk until the dough comes together.
      2. Turn the dough out onto a floured surface and knead until smooth. Dive the dough into 4 portions. Roll out 1 portion of dough into a circle about ¼-inch (6 ml) thick. Cut into 8 triangles. Repeat with the remaining dough portions.
      3. Heat the oil in a large pot until it reaches 350˚F (180˚C).
      4. Working in batches, fry the mandazi for 2-3 minutes per side, until golden brown. Drain on paper towels. Serve as breakfast or a snack with 5. Kenyan coffee or chai.

    INGREDIENTS

    • 1/4 cup (1/2 stick) unsalted butter
      • 2 tablespoons olive oil
      • 1 (2-pound) T-bone steak (about 1 inch thick), trimmed and at room temperature

      • 6 sprigs thyme
      • 6 cloves garlic, unpeeled

    PREPARATION

          1. Heat the butter and oil in a large frying pan over high heat for 1–2 minutes or until the butter starts to foam. Sprinkle the steak with salt and pepper. Add the thyme, garlic, and steak to the pan and cook for 4–5 minutes on each side, spooning the butter over the steak, for medium-rare or until cooked to your liking. Drizzle the steak with the butter to serve.

    • Mix the pepper, salt, dijon, and Worcestershire into the meat, gently.
    • Form 8 patties (I have a shallow prep bowl I use to get them all the same size and use a scale to keep it even!)
    • Heat a grill or a large skillet too high. Cook the patties for a few minutes on each side until done.
    • Remove, and add to a toasted bun with lots of lettuce, tomatoes, cheese, onions, and pickles.
    • Add ketchup, mustard, and mayo as required.

    Ingredients

    For the burgers

    • 1 kg beef mince ground beef
    • 3 garlic cloves finely chopped
    • 1/2 cup bread crumbs
    • 1 egg
    • 1/2 tsp ground coriander

    • 1/2 tsp ground cinnamon
    • 1/2 tsp ground cloves

    Instructions

    For the burgers

    • Combine all the ingredients in a large bowl and mix well. Heat a large frying pan and add some oil.
    • Fry a small amount of the burger mixture to check the seasoning. Adjust if necessary.
    • Form the mince mixture into burgers and fry for +- 4 minutes per side until browned and cooked through. When you’ve flipped the burger the first time, place a slice of cheese on the patty and allow it to melt while the patty is cooking.
    • Serve on a fresh bread roll with homemade salsa and guacamole.

  • TOMATO & ONIONS SALAD

    One of the easiest, is this tomato and onion salad. It’s always on the table if there is fish being served and you’re likely to find it in regular rotation with many other meals as well. It may become a new favorite after you give it a try.

    Ingredients

    • 2 large, fresh tomatoes
    • 1/2 Vidalia or other sweet onion
    • 1 1/2 Tbsp white vinegar
    • 3 Tbsp cup olive oil (good quality)
    • 1/2 tsp salt
    • 1/2 tsp pepper

    Instructions

    Begin by washing the tomatoes and removing the seeds inside. You only want the exterior flesh.

    Slice into strips and then very finely dice the strips.

    Cut the onion into very thin strips, as thin as you possibly can cut them. Dice the strips.

    Mix the onion and tomato together in a bowl.

    To prepare the dressing, whisk together the olive oil, vinegar, salt, and pepper.

    Drizzle the dressing on top of the tomato and onions. Adjust seasoning as needed.

    Serve cold or at room temperature

    • Salad:
    • 2 cups of cherry tomatoes

    • 1 small garlic cube – minced
    • 1/2 tbs honey (one small squeeze from the jar)
    • 8 twists of black pepper
    • Pinch of salt

    INSTRUCTIONS

    1. Slice cherry tomatoes in half – I used a combination of yellow and red tomatoes.  Add to a bowl.
    2. A mozzarella balls to the tomatoes. It’s important to use fresh mozzarella in this salad.
    3. Whisk together olive oil, white balsamic vinegar, minced garlic, honey, black pepper and salt. Pour over mozzarella and cherry tomatoes.

    Ingredients

    1. 1 Cup flour (more or less)
    2. 2 Cups water (more or less)

    Steps

      1. Boil water until it bubbles. The water should be very hot. This ensures the ugali will cook perfectly

        Add a cup full of flour into the water. Let it cook a few seconds until water starts to cover the flour

        Use a wooden spoon to quickly start mixing the flour and water

        Add a handful of flour and continue to mix the water and flour it will start to come together

        Reduce heat to medium and keep turning the ugali as it continues to stick together

        Place the wooden spoon under the ugali and form it into a ball in the middle of the sufuria

        Serve the ugali whole or slice. Enjoy with your favorite stew, meat, veggies, fish etc

    This one-pot vegetable rice is a kids’ absolute favorite dish. Because it’s lightly flavored with just the right amount of spice and the right balance of vegetables. This simple, easy, and effortless recipe can be served as a main course on its own for a light meal, or as an accompaniment to the main course. The best part is, it takes only 15 minutes to cook, uses only one pot, and is a great healthy vegetable rice option for the family.

    Ingredients

    • 1 cup (200 g) Rice
    • 1 Onion ½ cup diced
    • 1 tsp Garlic minced
    • 1 tsp Ginger grated
    • 2 tbsp Cooking oil
    • ½ cup (65 g) Carrots diced
    • ½ cup (70 g) Peas thawed
    • ½ cup Green beans diced
    • 1.5 cups (350 ml) Vegetable stock
    • ½ cup Fresh herbs chopped cilantro or parsley
    • 1 Cinnamon stick large
    • 2 Bay leaves large
    • 1 tsp Salt
    • 1 tsp Pepper

    Instructions

    • If using basmati or Asian rice it’s best to wash and soak for 30 mins before cooking. Drain and set aside.
    • In a skillet, saute’ onions, garlic, and ginger in oil for about 2 minutes until translucent.
    • Add cinnamon, bay leaves, carrots, peas, and green beans – saute a minute more.
    • Next, add the rice and cook on medium heat for two minutes so the rice is well coated with the oil.
    • Add stock, fresh herbs – and stir well. Season with salt and pepper.
    • Let come to a boil – then lower the heat to a minimum low. Cover the pan and let cook on low for 15 minutes undisturbed.
    • After 15 minutes – switch the heat off and let the rice rest for 10 minutes.
